Sourdough | 2 days | January 25 and 26 | €242,-

Sourdough is trending. Surprisingly? Not really. The robust crust, the texture and the unique taste makes it a wonderful bread. A course for anyone who wants to start baking and explore  sourdough.

Part of the course will be a visit to our miller at the windmill Twee Gebroeders. It is situated on the nearby dike of the river Maas and is on a walking distance from our bakery.

Sourdough | 2 days | April 18 and 19 | €242,- | Amsterdam

Our sourdough/levain course is coming to Amsterdam! We are welcomed by ‘Bettina Bakt’, who opens up her bakery for us at Van Woustraat 188.

Your teacher is Gerard Hardeman. Over the last twenty years he specialized in all sorts of organic sourdough. Gerard’s ‘Generously Filled Rye’ won the 1st prize in the category experimental bread at the first Dutch Sourdough Tasting in 2018. And because he’s convinced you’ll learn the most with your hands in the dough, you’ll be handling the dough yourself.

Yeastbread with Soaker | 2 days | May 16 and 17 | €242,-

Baking bread with a soaker (also known as water roux) brings nothing but good to your organic home-baked bread. The water dissects the starch and adds more taste, a bit of sweetness, and extra color for the crust, since the sugars caramelise.

Add to that the fact that your bread is softer and easier tot preserve, and you know why you want to use a soaker. In the baking course we’ll bake yeast bread, and try different types of soaker, as you can vary and experiment by soaking for instance whole grains or seeds.

Oren Shmuely  |  2 days  |  June 6 and 7  |  €242,-

Oren Shmuely he has been named Israel's best sourdough baker for 3 years in a row. He is known for his modern, organic and versatile approach.

In June Oren comes to the Netherlands again! Oren will take you to the Middle East and share his tips & tricks and his pleasure in baking.
